NIGERIAN GASTRONOMY-by Leyre de la Torre



NIGERIAN GASTRONOMY

Nigeria is a country placed in the west of Africa; it is also the most populated one in Africa and the 7th in the world with 173.6 million.



Its capital is Abuja:
·        It’s located in the center of Nigeria.
·        Abuja is a planned city, and was built mainly in the 1980s.
·        Its official language is English.






Being a former colony, it has a lot of blending of cultures but I am going to focus on their traditions, specifically on its gastronomy:
Jollof Rice                               
INGREDIENTS
Rice (1 pound)
Tomato puree (1 can)
Onion (1, sliced)
Garlic (3)
Olive oil (4 teaspoons)
Red bell peppers (3 , large)
White pepper (1 teaspoon)
Chicken (8)




DIRECTIONS
At first you will have to blend the tomatoes, onions, red pepper and garlic until it is smooth, you will do this with a blender.
Add olive oil and 4 cups of water to the mixture.
Wash and boil the rice and blend it with the mixture with a wood spoon.
Set it in the oven to medium heat and let it cook for 45 minutes.


MOIN MOIN
INGREDIENTS                      



Beans (3 cigar cups)

Ground crayfish (5 tablespoons)

Stock cubes (4, big)

Habanero pepper (1)

Ground nutmeg (2 teaspoons)

Watery tomato puree (800g)

Onions (2)

Vegetable oil (20cl)

Warm water (2L)

Salt (to taste)

DIRECTIONS
Wash the tatashe pepper
Cut the onions into pieces, grind the crayfish with a dry mill
Crush the stock cubes and set aside.
Wash the habanero peppers and set aside.
Blend everything.
Put the mixture into containers.
The time you will cook your Moin Moin depends of how much mixture you have in your containers, but the media is between 45 minutes.

I chose these two recipes because I have tried both of them and are delicious and easy to do;
